Mademoiselle Célestine Ladubay was born on the 15th of September 1832, near Saumur in Saint Just sur Dive.
At the age of 20, she married Etienne Bouvet on February 17th, 1852 in Saint Hilaire Saint Florent, a district of Saumur, Maine et Loire, bringing into her marriage the cellars located at the entrance of the village.
Together they created their Loire Valley sparkling wine winery: Bouvet Ladubay following the Tradtional Method winemaking process.
Célestine captures nature's awakening, when the floral notes are still light and freshness. This cuvée reveals this idea with its slight sweetness, delicately flowery, enhanced by the finesse of its sparkle.
To enhance its yellow fruit and white flower aromas, we added a "very 19th century" dosage liqueur between Brut and Demi-Sec, the Extra Dry dosage. The dosage liqueur for the Célestine cuvée is flavored with elderflower liqueur.
A golden color with golden reflections brought by its fine bubbles suggests a deep and luminous wine.

Célestine will create a sweet springtime aperitif moment all year round. It can be served on ice, its floral aromatic palette can also be a great cocktail base. It can also be served with a Loire Valley goat's cheese and a warm honey coulis.
